Ingredients and Instructions

For the Greek Chicken Gyro:

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons Chicken Souvlaki Gyro spice blend
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 4 wholemeal pitta breads
  • 1 cup tzatziki sauce
  • Fresh lettuce, tomatoes, and red onions for garnish

For the Roasted Mediterranean Vegetables:

  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 courgette, sliced
  • 1 red onion, cut into wedges
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

Preparing the Greek Chicken Gyro

  1. Marinate the Chicken: In a bowl, combine the Chicken Souvlaki Gyro spice blend, olive oil, and lemon juice. Add the chicken breasts, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavour.
  2. Grill the Chicken: Preheat your grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked. Once done, let them rest for 5 minutes before slicing into thin strips.
  3. Prepare the Pitta Breads: Warm the pitta breads on the grill for about 1 minute per side until soft and pliable.
  4. Assemble the Gyros: Place a portion of sliced chicken onto each pitta bread. Top with fresh lettuce, tomatoes, red onions, and a generous dollop of tzatziki sauce. Fold the pitta around the fillings to create a wrap.

Preparing the Roasted Mediterranean Vegetables

  1. Preheat the Oven: Preheat your oven to 200°C (400°F).
  2. Prepare the Vegetables: In a large bowl, combine the chopped peppers, courgette, red onion, and minced garlic. Drizzle with olive oil, and season with dried oregano, salt, and black pepper. Toss until the vegetables are evenly coated.
  3. Roast the Vegetables: Spread the vegetable mixture in a single layer on a baking tray. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelised.
