Indonesia literally rose out of the sea as a result of a series of volcanic eruptions millions of years ago.
Those fiery beginnings continue to influence Indonesian cuisine, from Jakarta to Java, with a passion for heat that will challenge even the most discerning of chilli heads. Our Indonesian Pig Roast pays homage to that tradition, so be warned: Contains Bhut Jolokia Ghost Pepper.
Traditionally slathered on a whole roast hog for family celebrations, we normally tone it down and opt for pork belly or shoulder, although roast chicken tastes wonderful with this rub too!
